An indulgent ode to truffle…

This pop-up turned FRED into a showcase for one ingredient: truffle, in every form it could take. The pop-up leaned into indulgence, built around dishes designed to let the ingredient's earthy, aromatic character take centre stage rather than play a supporting role.

Truffle worked its way through the menu — shaved over pasta, folded into risotto, layered into fries, and finished with truffle oil across several courses. The format leaned luxurious and a little decadent, positioning the pop-up as a special-occasion evening rather than an everyday menu.
