Game meat, reimagined

We turned FRED's menu over to game meat, reimagined beyond its usual rustic, hunting-lodge associations. The pop-up leaned into refined technique and modern plating, treating venison, duck, quail, and other game as the center piece of a contemporary menu rather than a seasonal novelty.

Rich, earthy flavors were balanced against bright, acidic accompaniments — think seared venison with charred stone fruit, or duck paired with something sharp to cut the fat. The format positioned the pop-up as bold and a little adventurous, aimed at diners looking to try something outside FRED's usual repertoire.
